The downside of hosteling can be the noise. If there are a number of young people in the facility, they may be partying until the wee, small hours of the morning. I made sure I had a pair of earplugs with me for such occasions! I always tried to find a hostel that had an 11 PM quiet time and a late check-out time. Most hostels are shut down for 3 or 4 hours during the afternoon while cleaning is done so be prepared to be out sightseeing, even if you had a noisy night.

Hosteling isn’t for everyone but it certainly can add to the adventure and is well worth looking into.

5 Lbs. Red Potatoes

1 Dozen Eggs

1 Small Onion

1 Jar Mayo

Salt & Pepper

Boil the potatoes (whole) until firm-tender (you don’t want them to overcook, or they will get mushy).  Remove from pot to a cookie sheet lined with paper towels to cool.  Hard boil the eggs*.  When the potatoes are cool enough to handle, peel the skin off and dice into around ½ in. cubes.  Peel the eggs and chop them up into the same bowl.  Chop or process the onion and add to bowl.  Add salt & pepper to your personal taste.  Dump the entire jar of Mayo in and mix it up with your freshly washed hands.  Refrigerate.

*To make perfect hard-boiled eggs every time, place the eggs in the pot.  Now add COLD water to cover the eggs.  Place on stove and bring to a boil.  As soon as the eggs start to boil, set your timer for 15 minutes.  When the timer goes off, CAREFULLY dump the hot water while running cold water into the pan to replace it.  Keep running the cold water into the pan until it STAYS cold.  (the heat from the pan and the eggs will warm the water).  Now they are ready to peel!
